Since its publication in 2006,the Report on the Development of China’s Catering Industry (also known as the Blue Book of the catering industry) has consistently focused on the forefront and hot issues in the development of the catering industry, and made in-depth and accurate analysis of the development status of the industry. It has become an authoritative reading material in the catering industry and an important medium for the dissemination of China’s excellent catering culture. Upon the review by the Paper Publication Review Committee and approval by the Chinese Academy of Social Sciences, the Report on the Development of China’s Catering Industry (Blue Book of the catering industry) has been selected as the “academic publishing project of innovative engineering of the Chinese Academy of Social Sciences” for many consecutive years.
The Report onthe Development of China’s Catering Industry (2020) is divided into five parts, that is, General Report, Regional Development, Annual Hot Topics, Special Reports and Appendix.
The general report of this book is the research result of thenational social science fund project “Study on the Transformation of Industrial Policies for High-quality Development of China’s Catering Industry”. The first part focuses on the research of industrial operation, analyzing the continuous important role of China’s catering industry in the fields of stabilizing growth, promoting consumption, stabilizing employment and benefiting people’s livelihood under macroeconomic pressure in 2019, analyzing the impact of COVID-19 on the political, economic, social and technical environment for the development of the catering industry, proposing that the catering industry should thoroughly study and judge the changes of the development environment, and accelerate the transformation and upgrading during the “14th Five-year Plan” period under the guidance of the development concepts of “innovation”, “coordination”, “green”, “openness” and “sharing”. The second part focuses on the research of industrial policy, summarizing and analyzing the industrial policies at different stages, such as precise prevention and control in different regions, orderly resumption of work and production, and putting forward the suggestions on short-term industrial policy adjustment and long-term industrial policy transformation based on the need for making high-quality development in the long run and getting out of the predicament currently. Regional Development focuses on Beijing, Shanghai, Guangdong Province, Shaanxi Province, Liaoning Province, Jilin Province and Heilongjiang Province, Macao and other provinces and regions, making an inventory and analysis of the characteristics and development trend of the catering market there in 2019 and early 2020. Special Reports bring together the latest research results in the vegetarian industry, coffee industry, night food economy, ethnic catering, food culture, food safety, etc.
