In modern society, the mainstream food system, in which consumers buy agricultural products that are transported long distances from overseas, and which are supplied directly to local consumers by local producers, is known as the alternative food system, which originated in Japan and Switzerland in the 1960s and has since expanded globally. As a useful complement to the mainstream food system, alternative food systems can, to a certain extent, solve the problems of the mainstream food system. Through a combination of theoretical and practical research and analysis, this book points out the significance of alternative food systems research, analyses the dilemma of the mainstream food system and the rise of alternative food systems, explains the characteristics and operation of alternative food systems in China, conducts a case study on alternative food systems from the perspective of consumer trust, and puts forward policy recommendations to promote the development of alternative food systems.
